Whether you’ve just cooked a delicious, healthy dinner recipe that your whole family loved, or are looking for a light snack to satisfy your sweet tooth, you probably want a few healthy dessert ideas on hand. To help you out, we’re sharing our favorite guilt-free recipes that are still decadent, even though they’re lighter than the usual sugar-filled dessert recipes.

Homemade Strawberry Ice Cream

Creamy, dreamy, and made with fresh strawberries. It’s an old fashioned strawberry ice cream recipe that makes it the perfect spring or summer dessert.

Ingredients

  • 1 1/2 cups strawberries, hulled and diced
  • 2 Tbsp honey
  • 1/2 cup granulated sugar
  • 1 tsp lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup half and half
  • 1 tsp vanilla extract

Instructions

In a large bowl, mix strawberries, honey, sugar, and lemon juice. Allow to sit 15-20 minutes, or until the strawberries have released their juices.
Mash the mixture with a potato masher, fork, or pastry cutter until there are no longer any large strawberry pieces (if you prefer a smooth ice cream, use a blender or food processor instead*).
To the strawberries, mix heavy cream, half and half, and vanilla extract. Stir just until combined.
Pour the mixture into your ice cream maker, and follow your manufacturer’s instructions. You can eat the ice cream soft-serve, or freeze it in an airtight container for 3-4 hours to thicken it up slightly. For best results, allow the ice cream to sit at room temperature for about 5-10 minutes to soften before serving.

CHOCOLATE DIP FOR FRUIT

Such an easy fruit dip that uses a few basic ingredients yet creates something perfectly irresistible. It’s light and fluffy, rich and creamy and decadently chocolatey. A must try fruit dip!

Ingredients

  • 1 cup heavy cream
  • 1 cup powdered sugar , divided
  • 1 (8 oz) pkg cream cheese, softened
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp vanilla extract

Instructions

In a mixing bowl using an electric hand mixer, whip heavy cream until soft peaks form, addw 2 Tbsp of the powdered sugar and whip until nearly stiff peaks form. Set aside.
In a separate mixing bowl whip together cream cheese, 1/4 cup + 2 Tbsp of the powdered sugar, the cocoa powder and vanilla extract until smooth. Mix in whipped cream mixture and remaining 1/2 cup powdered sugar.
Chill until ready to serve. Serve with strawberries, bananas or raspberries.

Cannoli with Creamy Ricotta

Crispy, baked pastry shells filled with a filling.

Ingredients

– For the Cannoli Shells
  • 2 large egg whites
  • 1/3 cup sugar
  • 1 tablespoon canola oil
  • 1 tablespoon butter , melted
  • 1 teaspoon pure vanilla extract
  • 1/3 cup all-purpose flour
– For the Creamy Ricotta Filling
  • 1/2 cup heavy whipping cream
  • 1/2 cup ricotta cheese
  • 3 tablespoons cream cheese , room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon grated orange zest
  • 3 tablespoons semisweet mini chocolate chips

Instructions

Preheat oven to 375.
Lightly grease two baking sheets with baking spray; set aside.
In a medium-size bowl whisk together the egg whites, sugar, canola oil, melted butter, and vanilla. Whisk until thoroughly combined.
Add in flour and continue to whisk until smooth, and no lumps appear.
Spoon 4 to 5 mounds of batter onto each baking sheet, using 3 teaspoons of batter for each.
With the back of the spoon, spread each cookie to about 4-inch diameter.
Space the cookies at least 2 inches apart.
Bake for 7 to 8 minutes, or until edges begin to brown.
Using an offset spatula, loosen cookies from baking sheet and shape into tube form. You can use a round metal utensil and wrap the cookies around that.
Set cookies seam-side down and let cool.
